Food to the Beat of Your Heart
Nam Charm - Nam is as in Viet Nam, but also as in “Năm”, meaning “Five" in Vietnamese - the ideal food balances among 5 natural elements.
We grew up with it, taking it for granted as the small things that make up a way of life, until we were far away from it, enough to know and feel its gestalt. You can not summarize a cuisine, the same way you can not sum up a people, a culture, a history, in a few words.
They say you know it when you taste it. It may take you home, it may help you get away, or perhaps just for a second drift you along and let you see another part of this world. And beyond that, it lets you see the world the way other people live it, not the way other people depict it. Perhaps we say, how the cuisine carries the culture, is how we should cook.
